Now this little beauty is one of my favorites because it is so simple and easy to make, and with a preparation time of only 20 minutes its also very quick! 
– Weighed Salmon Fillet (skin on) 
– Ground almonds (weighted out) 
– ½ tsp ground coriander 
– ½ tsp ground cumin 
– Juice of 1 lemon 
– Sea Salt & Ground Black Pepper 
Preheat oven to 350* F / 170*C 
Combine ground almond, coriander and cumin in a small bowl. 
Sprinkle the salmon fillet with lemon juice and season LIGHTLY with salt and pepper (optional) 
Coat salmon with ground almond mixture (both sides) 
Place skin side down on a baking tray (greased lightly with coconut oil) 
Bake for 12-15 minutes or until salmon flakes easily with a fork.
